Colorful Edamame Salad


Ingredients

  • 1.5 Cups
    edamame, shelled
  • 4 Cups
    romaine lettuce, washed
  • 1 Cup
    carrots, shredded
  • 2 Cups
    cherry tomatoes
  • 1 Cup
    cucumber, sliced
  • .5 Cups
    red onion, diced

Instructions

  1. Cook Edamame according to package.

  2. Prepare all other ingredients and combine with the edamame in a large salad bowl.

  3. If desired, toss with a low or non-fat dressing of your choice.
