Green Chickpea Caprése Salad


Ingredients

  • .5 Pounds
    raw mini farfalle, cooked and cooled
  • 8 Ounces
    green chickpeas
  • 8 Ounces
    kidney beans
  • 4 Ounces
    tomatoes, diced
  • .5 Cups
    fresh basil, thinly sliced
  • 2 Cups
    balsamic vinaigrette
  • .25 Teaspoons
    sea salt
  • 8 Ounces
    perlini mozzarella cheese

Instructions

  1. Cook and cool pasta.

  2. Microwave green chickpeas for 2 minutes.

  3. In medium bowl, add tomatoes, mozzarella cheese, basil, and green chickpeas.

  4. Toss in vinaigrette dressing and garnish. Served chilled and enjoy!
