Green Chickpea Protein Salad


Ingredients

  • .5 Cups
    quinoa
  • 1 Cup
    water
  • 1 Cup
    green chickpeas
  • .5
    english cucumber, diced
  • .5
    green bell pepper, diced
  • 1
    stalk celery, diced
  • .5
    medium carrot, diced
  • .5
    red onion, diced
  • .5 Ounces
    parsley, chopped
  • .5 Cups
    mayonnaise
  • .12 Cups
    lemon juice
  • .75 Ounces
    cider vinegar
  • .12 Teaspoons
    dill weed
  • .12 Teaspoons
    salt
  • .12 Teaspoons
    dried basil
  • .12 Teaspoons
    garlic, minced

Instructions

  1. Boil quinoa in water. When tender, rinse, drain well, and cool on sheet pan.

  2. Microwave green chickpeas 2 minutes. Let sit for 1 minute.

  3. Mix in dressing: mayonnaise, vinegar, lemon juice, dill, salt, basil and minced garlic.

  4. Mix together: cooked/cooled quinoa, green chickpeas, cucumber, bell pepper, celery, carrot, parsley and red onion.
