Mediterranean Edamame Salad


Ingredients

  • 2 Cups
    edamame, shelled
  • .66 Cups
    sun dried tomatoes, sliced
  • .33 Cups
    red onion, diced
  • .5 Cups
    black olives, pitted
  • .33 Cups
    olive oil
  • .25 Cups
    feta cheese, crumbled
  • 2 Tablespoons
    white wine vinegar
  • 1 Tablespoon
    white balsmaic vinegar
  • 1
    garlic clove, minced
  • 1 Teaspoon
    fresh oregano, minced
  • salt and pepper

Instructions

  1. Take fully cooked shelled edamame from package and let thaw.

  2. Mix oil and vinegars in separate bowl with garlic and oregano.

  3. Toss with other ingredients.

  4. Season with salt & pepper.

  5. Let marinate at room temperature for at least 30 minutes before serving.

  6. Enjoy!
